Delicious Vegan Recipe For A Black Bean, Brazil Nut, Chilli, Coriander And Oat Burger

I’m delighted to introduce a new contributor to our mutant kitchen. We’ve been without a food writer for a number of months so I’m thrilled that Ethna Reynolds, the Burlesque Chef, is going to start contributing to our blog. I’ve only ever eaten meaty baps but I promise to give this a try over the coming days. So before I start here’s a little bit about Ethna:

I was a Vegetarian for about 4 years, which was a little unusual while working as a chef. I eat meat now but I really do favour many Vegetarian dishes over the meat-fests that we’re so used to seeing (just look at a typical restaurant menu!)

I love a good old burger, like most of us, but my preference will always stick to the veggie option as I find so much meat based burgers lacking in taste, or just too damn heavy. This recipe recently won me an EasyFood Best Burger award in a competition against meaty versions of the world’s favourite handheld snack.

I know alot of people see Vegan and Vegetarian food as bland but they are so wrong on so many levels! You can do so much more with pulses, beans, veggie blends and of course all the delicious fresh herbs and spices to complement.
The awesome thing about this recipe is that it’s really healthy, really quick to make and cooks in minutes. And it’s super tasty, and that’s probably the most important detail!

Make a pact for a Vegetarian/Vegan day each week, don’t dread it, make it something to get excited about! Do a little research and you will be surprised just how versatile and flavour filled this dietary option can be, I promise you it’s more than a bowl of boiled veggies!

Vegan Black Bean, Brazil nut, Chilli, Coriander and Oat Burgers
820g Black beans- canned or dried then prepared
1 cup Brazil nuts- chopped
2 cups of plain oats
Half a red chilli and half a green chilli- chopped
1 small onion- chopped finely
2 sprigs of fresh parsley
8 sprigs fresh coriander
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1 tsp lime zest
1 tsp Lime juice
¼ cup olive oil
Pinch dried chilli flakes
Sea salt and cracked pepper to season

In a small hand blender, blitz the Brazil nuts, oats and onion for 10 seconds.
Add the rest of the ingredients – it’s okay if all the beans don’t blend, it’s nice to have them with a bit of bite.
Form into patties, coat in seasoned flour and pop in the fridge to rest for a few hours.
Grill or pan fry for about 4 minutes each side (depending on the thickness) and serve on wholewheat pitta bread with your favourite dressings, like Fresh Salsa!

Fresh Salsa
3 large ripe tomatoes (chopped and deseeded)
Half a red onion
2 large fresh jalapeño (chopped) – or 1 heaped tbsp jarred)
2 tbsp chopped coriander
Juice of 1 lime
2 tbsp sweetcorn
Half tsp ground coriander
Half tsp ground cumin
Just chop tomatoes and jalapenos and mix all together in a bowl. Season well with salt and pepper. Super simple!
